Coconut Raisin Granola Bites

Ingredients

  • 1 cup Sun-Maid Natural Raisins
  • 1/2 cup Sun-Maid Apricots, Apples, and/or Dates
  • 3/4 cup granola
  • 1/2 cup sliced almonds
  • 1/2 teaspoon almond extract
  • 3/4 cup sweetened flaked coconut

Directions

  • 1

    Combine raisins and apricots in small bowl; add enough hot water to cover.

  • 2

    Let stand 10 minutes or until plump.

  • 3

    Drain well; pat dry.

  • 4

    Place in food processor; add granola, almonds and almond extract.

  • 5

    Pulse until finely chopped and mixture begins to stick together; stir in coconut.

  • 6

    With slightly moistened hands, roll 1 tablespoon mixture into 1-inch balls; place in paper cups.

  • 7

    Garnish with additional coconut, if desired.

  • 8

    Cover and refrigerate 2 hours to allow flavors to blend.
